Urethane cement handles that swing far better than tile or thin epoxy. When the box allows it, we run the new floor right into the cooler, so there is no seam at the threshold.

Plenty of older Lethbridge restaurants still have red quarry tile. Cracked tiles and worn grout soak up grease and water. We take the tile out, grind the slab and rebuild the slope to the drains, then install commercial kitchen flooring as one continuous surface.
Where tile cannot come out, we can sometimes go over sound tile after testing how well it is bonded.

A sealed floor is quick to clean at closing. Sweep, scrub with a deck brush and your usual degreaser, then squeegee to the drain. Commercial kitchen flooring made of urethane cement takes hot water, steam cleaners and most kitchen chemicals in stride.
Lift or roll heavy steel equipment instead of dragging it. If a dropped stock pot does gouge the surface, the spot can be patched in an evening.
